I've never attempted a Caesar dressing from scratch but I will recommend a commercially made one. Cardini's - named for Caesar Cardini the Italian/Mexican restaurateur and creator of the Caesar Salad. Not that I have a huge frame of reference with this kind of salad dressing but, I have used it for years and it is very tasty. I highly recommend it. (The “lite” version is okay but not nearly as good BTW – so, if you’re cutting cals stick with the regular and ease up on the amount.)

Good, but most commercial varieties (and most restaurant versions for that matter) are overpowering, drowning the salad.

I love the one from Panera Bread.

Caesar dressing is good for a change every once in a while, but I don't use it that often.

I wish they made Caesar dressing without anchovies.

My favorite salad dressing! Perfect if you just want a plain salad, or if you want it with the works!
